In that case it may work.
You'll need to know what IPSec options the Sunray IPSec has,
and match the settings with your Openswan gateway.
Openswan should interrop with any standards compliant IPSec device.

Note that you'll still need a Sunray server on the other end of the VPN tunnel,
to provide the virtual desktop functionality.
