That's a tall request. I guess you should start with the OpenSWAN wiki
and start reading...

What you're probably looking for is in the "how to configure" section:

Start with the basic tutorial and work your way in.

I wouldn't go near advanced topics like Opportunistic Encryption and the
like until you have at least one functioning tunnel up and tested.

Openswan: Building and Integrating Virtual Private Networks
