in that case, does it have to bind to all available interfaces, as it
currently does, or can I make it bind to a specific interface (which
would allow me to add an alias and use that...)? I'd rather not be
recompiling kernels and such-like.....<br>

ipsecX interfaces are only available when using KLIPS, the openswan
kernel ipsec stack. They are not available in the 2.6 native ipsec stack.
Either use 2.4 with klips, or wait a week for the KLIPS port to 2.6 to
be finished.
